Jonathan Korecki, executive chef at Sidedoor restaurant, will be joined by Trevor Bird, Fable restaurant in Vancouver, on July 9 for the event for which tables are currently available.
The pair will present a five-course meal for $85 plus $55 for optional win pairings.
“Trevor has been planning a few dinners across the country, he did one with Connie DeSousa from Season One already,” Korecki says.
“Basically he just called me up out of the blue a few months ago and asked what I thought of the idea. It’s going to be a collaborative five-course tasting. We’re going to be taking the idea of farm to table using ingredients from Ottawa and making them into Asian-inspired dishes as best we can, with the products available.
“We took a stand that everything has to be Canadian, for one. Because he’s coming from Vancouver we can’t write off any of the amazing Organic Oceans seafood. That being said, I will be sourcing everything I can from here – farms here for local produce, and either Mairposa Farm or Maison du Gibier for the proteins. Any farmer here who raises local products, we’re going to get our hands on and use.
“We’re definitely using an abundance of local produce, for sure. We’ve been chatting about a steamed bun idea using local flours and local pork, things like that. Right now we’re texting each other daily trying to figure out what we want to do, and take it from there.”
